Homemade Cordon Bleu
Ingredients:
4 Chicken breasts
4 Slices of ham
4 Slices of swiss cheese
Salt and pepper to taste
Breadcrumbs for topping
Step 1.
Heat oven to 350°
Step 2.
Choose a 7" to 9 " long glass casserole dish which is about 6" wide and spray it with cooking spray.
Step 3.
Spread plastic wrap across a surface that can be pounded on without harm.
Step 4.
Lay one chicken breast on the plastic wrap.
Step 5.
Put a new layer of plastic wrap over of it and pound it until it is about a half to three quarters of an inch in thickness. It's best if the smooth side of the breast is up when pounding. I've always found a cast iron skillet best to pound the breasts. Repeat flattening the remaining 3 chicken breasts.
Step 6.
Put salt and pepper on each breast.
Step 7.
Put 1 slice of swiss cheese on each breast.
Step 8.
Put 1 slice of ham on top of the cheese.
Step 9.
Starting at the pointed end of the breast, roll each breast as tightly as you can including the ham and cheese into a tube shape.
Step 10.
Put all 4 breasts into your casserole dish and sprinkle breadcrumbs on the top to coat and around the edges to fill the spaces. This will help the cheese not to run out so much.
Step 11. Bake for 45 minutes.
