Chicken Mexicali

Ingredients:

2 chicken breasts
3/4 cup sour cream
3/4 cup salsa
1/2 cup Mexican cheese for mix
1/2 cup Mexican cheese for topping
Salt to taste
Pepper to taste
Garlic powder to taste

Directions:

1. Preheat oven to 375°
2. Put aluminum foil on 8" x 8" pan and spray with butter spray.
3. Butterfly 2 chicken breast, add salt, pepper and garlic powder.
4. Brown the breasts in oil heated to 350° just enough to seal in the juices. Then dry them on paper towels and lay them in the pan.
4. In a small bowl, mix sour cream, salsa, and 1/2 cup of Mexican cheese.
5. Pour mixture over breasts in pan.
6. Cook for 35 minutes at 375°.
7. Put 1/4 cup of Mexican cheese on top of each breast and put under broiler. Watch very carefully while broiling and take out as soon as cheese melts.
