Step 1
If your wings are not cut already, cut them into three sections. Generally there will be two usable pieces, the "drumette" which looks just like a drumstick and the immediately attached wing piece with two interior bones. The third triangular pointed shaped piece that is attached is worthless and should be discarded. The best method of cutting is to first cut off the piece to be discarded (triangular piece) and then while holding the other two pieces together vertically, place the knife between them and slice straight down. There are cartilages in each joint that make cutting much easier.
Step 2
On a large counter lay three layers of plastic wrap overlapping slightly to cover counter. This is your easy cleanup process. Put all your wings on the top of the plastic wrap and put salt and pepper on them. Flip them over and put salt and pepper on the other side. Then generously coat them with flour. At this point you can lift all four sides of the plastic wrap and bounce the wings around a bit to evenly coat them in the flour, salt and pepper. Cleanup consists of throwing plastic wrap in trash!
Step3
In a saucepan add a half stick of (real) butter and a cup and a half of Texas Pete hot sauce. Heat until mixed, but not too hot. Cool and pour mixture into gallon freezer bag.
Step 4
Preheat oil to 380° in a wok or other deep fry type pan. Use a thermometer as this step is very important.
Step 5
Set your timer for 8 minutes. Once the oil reaches 380°, GENTLY! drop the wings into the oil one at a time. Don't put more wings into the pan that will fit easily so that all will be submerged. Then hit your timer. When the wings float, they are done, but resist the urge to remove them. The test of really good wings is how crispy they are after they are done! So leave them for the whole 8 minutes before removing them.
Step 6
Set each wing at least 1" apart on paper towels to drain and cool slightly. You don't want to melt the baggie. This is also the step that will add to the "crispy".
Step 7
If you want mild hot wings, slightly dip them into the gallon baggie of Texas Pete mixture and serve them up. If you want really serious HOT WINGS!!, throw em in the bag and shake em up!!!
